Wallace’s is a family farming business in the picturesque surroundings of the Blackdown Hills‚ on the Devon-Somerset border.

Designated an Area of Out-standing Natural Beauty and more recently an Environmentally Sensitive Area‚ the Blackdown Hills are ideally suited to producing quality grass and forage required to raise animals in their natural environment.

Our animals are raised without the use of growth promoters or other modern additives; in fact the only fertilisers used are those necessary to ensure the long term fertility of the soil helping to produce animals of fantastic quality just the way nature intended.

Since arriving in Devon‚ nearly 20 years ago‚ the need to market our own farm produce in order to gain the premiums that our quality stock demanded‚ meant that our family had develop new skills.

Our ambitious plan to build a fully licensed butchery on the farm‚ which opened in 1993‚ removed the necessity to transport our animals over great distances to slaughter‚ especially deer and bison‚ which are so prone to stress. We are convinced that this one fact has a greater bearing on the quality of the end product than anything else.

Visitors to the farm will see the breeding herds of Bison‚ Highland Cattle and Red Deer on this working Devon farm‚ all enjoying an easy life the way nature intended.As well as the butchery producing the meat‚ our specialist bacon room dry cures the bacon that comes from the wonderful outdoor pigs from one of our neighbour’s farms.

The kitchen and the smokery are busy developing wonderful new recipes and meals to compliment the outstanding quality of meat. Our new farm shop which opened in July 2004 offers a huge range of top quality fresh local produce‚ some of which is available in our new fully licenced restaurant where everything is freshly homemade.

The shop and restaurant and all the areas of production naturally compliment each other‚ together with our desire to provide the best professional and personal service. Mail order parcels are regularly sent all over Britain and we still attend many of the local farmers’ markets.

Wallace’s was started by Graeme Wallace when he moved to Hill farm Hemyock back in 1986. The early years where devoted to raising animals of excellent quality by tried and tested old fashioned methods of husbandry and without the use of modern additives. Over the subsequent years‚ as the butchery developed‚ the team grew. The tiny one room farm shop out-grew itself and during 2003‚ the family started building the huge new farm shop and restaurant‚ with more than 30 employees‚ which finally opened in July 2004.

Every week the butchery despatches dozens of orders to local village shops in the area spreading the word about Wallace’s. Many of the customers who we have nurtured at farmers’ markets now travel out to Wallace’s because there is always so much to see and it’s now becoming a great place to have lunch. In fact‚ Sunday lunches are always booked up well in advance.

We are constantly being written about in the press‚ both local and national‚ as an example of a small farm that is more than just surviving in this modern age.

We are all proud of selling a huge range of great products and we fully appreciate the support of a growing band of customers and friends.
